Executive Chef Chris Noonan
Chef Chris Noonan has been perfecting his culinary craft for over thirty years through award-winning restaurant groups, hotels, and institutions including The Game Creek Club in Vail, Colorado and Roar Social House in Allentown, PA and Pitts’ University Club. A long tenure with the Big Burrito Restaurant Group saw him lead the kitchen teams at Casbah, Soba, The Warhol Museum and Phipps Conservatory. Gaining experience through mentorship under multiple James Beard-recognized chefs, Chef Chris continues to build his life-long career focused on a genuine care and excitement for creating something that makes people happy. At Spirits & Tales, Chef Noonan embodies the culinary and cultural experience, bringing with him a passion for foraging wild mushrooms and plants, a penchant for outdoor athletics, and a love of music via his ever-expanding vinyl collection.
Sous Chef Michael Pak
Sous Chef Bryony Hensel
Chef B began her culinary career in New Orleans with Chef Susan Spicer at Bayona, learning global cuisines through a New Orleans perspective. She then worked with several James Beard Award-winning chefs before returning to Bayona as Sous Chef. After Hurricane Ida, she moved to Knoxville, TN, to open Fire + Smoke, a Southern Prime steakhouse, featuring Certified Angus Beef and A5 Wagyu, with a focus on local ingredients.
Now at the Oaklander Hotel and Spirits and Tales, she continues to share her unique culinary perspective and passion for teaching young cooks the techniques learned from Chef Spicer and her grandmother.
Outside the kitchen, she enjoys spending time with her Chihuahua, Mudbug, tending to houseplants, reading, and working with yarn.
